The unit contributes to improving knowledge on the functionalities of plant products and their constituents in order to increase their performance for both food and non-food uses. All of the UMR's research activities are grouped into five complementary and multidisciplinary areas:
• Fractionation, extraction and separation of renewable resources
• Structuration of biopolymer based matrices and powders
• Mass Transfer, Structure and Reactions in the Food packaging system
• Microbial biotechnology and enzyme technology of lipids and biopolymers
• Knowledge representation and reasoning to enhance the usage of bioresources
The first axes concern the transformation processes of agro-resources (physical, biotechnological and physicochemical), from the dissociation of native structures with generation of agro-polymers or functional molecules to their assembly and/or functionalization with development of complex structures. This in order to reinforce or better express the functionality of the components or to control material transfers and the bioavailability of materials, matrices and/or product/packaging pairs.
A final transversal axis is dedicated to the development of methodologies for decision support in agro-resource processing chains.
